Un mastro birraio in Garfagnana

L'altro giorno, siamo andati con i nostri studenti del corso Parla e Cucina a conoscere un'insolita attività che si è sviluppata negli ultimi anni nel paese di Piazza al Serchio, nella Garfagnana settentrionale, ai confini con la Lunigiana.

Roberto Giannarelli è il "pirotecnico" ideatore di una produzione artigianale di birra con l'utilizzo del farro, un cereale tipico dell'alta Garfagnana, ed anche delle castagne, altro simbolo della cultura gastronomica locale. Naturalmente, gli ingredienti di base restano il luppolo, l'orzo e l'avena, ma il gusto particolare viene dato con l'aggiunta del farro o della castagna, offrendo una birra unica e inimitabile.

Il birrificio, iniziato 10 anni fa in una piccola stanza, si è sviluppato fino ad occupare alcuni addetti e a raggiungere un produzione annuale di oltre 100.000 litri. La dimensione resta comunque quella di un birrificio artigianale e la birra che viene prodotta ha il pregio di essere "viva", non pastorizzata e ricca di lieviti e fermenti, a differenza della birra prodotta industrialmente con caratteristiche e gusto standardizzato e uniforme.

Roberto ci ha raccontato della sua passione e del sacrificio che ha affrontato per iniziare questa attività, continuando per alcuni anni con il suo lavoro precedente e al tempo stesso impegnandosi per sviluppare e far conoscere la sua creatura, la Petrognola.
Ci ha comunicato tutto il suo entusiasmo e naturalmente ci ha fatto assaggiare alcune delle sue birre molto speciali che rappresentano un interessante e riuscito connubio tra una bevanda che ha le sue origini altrove e i prodotti locali della Garfagnana.

The other day, together with the students of our course "Speak 'n Cook Italian" we went to discover an unusual activity that has developed in the last few years in the village of Piazza al Serchio, in the upper Garfagnana near the border with Lunigiana

Roberto Giannarelli is the spirited maker of a homemade beer with spelt, a typical cereal of Garfagnana and chestnuts, another symbol of the local gastronomic culture. Of course, the base ingredients as of any beer are hops, barley and oats, but a special flavour is obtained by adding spelt and chestnut, making a matchless delicious beer.
The brewery was started about 10 years ago in a small room and has since developed to give work to a few employees  and reach a production of over 100 thousand liters per year.  Its dimension remain that of a small brewery and the homemade method  offers a "living" beer, non pasteurised and rich in yeasts and ferments, unlike industrial beers with standard taste and features.

Roberto has told us of his passion for brewery and of the sacrifices he's done to start this activity, continuing for some years his previous work and at the same time engaging to develop and promote his creature : la Petrognola  (his brand)
He has made  all his enthusiasm known to us and obviously has offered us a taste of some of his special beers, representing an interesting and successful union between a drink originating elsewhere and the local products of Garfagnana.

    1. Buonissima direi! Ce ne siamo scolate alcune bottiglie questa settimana, visto che non potevamo andare al birrificio e tornare a mani vuote, no? Ciao!
